Understanding the Controls

The machine is equipped with a  key pad and a display panel. Pass  the mouse over the image on the right and  you will see the function of each of the keys and symbols. [This function requires Internet Explorer and may not work with different browsers..]

The keys control the operation of the machine and allow you to adjust the temperature at which it melts and tempers the chocolate.

The display panel indicates the machine's status and prompts the user when necessary.

When the cursor is centered the chocolate has reached the desired temperature
Shows that the thermostat is set to hold the temperature constant
The thermometer icon appears when you have raised or lowered one of the default temperature settings
Shows the chocolate is tempered and ready to use
The chocolate is being melted
The chocolate is being tempered
The chocolate is being tempered using the slower 'Temper2' setting
This symbol flashes and the machine beeps to remind you to remove the solid seed chocolate.
The machine is set for White chocolate
The machine is set for Milk chocolate
The machine is set for Dark chocolate
Shows when the Pause button is pressed
Display Panel

Press to lower the temperature. In 2°C (4°F) steps when melting chocolate and in 0·05°C (0·1°F) steps once the chocolate is tempered.
Press to hold the chocolate at the current temperature
Press to raise the temperature. In 2°C (4°F) when melting chocolate and in 0·05°C (0·1°F) steps once the chocolate is tempered.
Sets the machine for White chocolate.
Sets the machine for Milk chocolate. This is the default setting.
Sets the machine for Dark chocolate.
Starts to melt the chocolate. The bowl will begin rotating. If you wish to alter the melt temperature, do so now.
When the chocolate is melted, press to start the automatic tempering cycle.
Starts a longer tempering cycle for hard-to-temper chocolate.
Stops the machine and resets the computer.
Turns off the beeps warning you to remove the solid Seed chocolate and allows the tempering cycle to finish.
Stops the bowl rotating for 60 seconds. Press again to re-start.
